Mediterranean Grilled Beef Kabobs
Ingredients
- 2 lbs. beef sirloin, cut into cubes;
- ½ teaspoon sea salt
- 1 teaspoon ground black pepper
- 1 red bell pepper, cut into 1-inch pieces
- 1 large white onion, cut into 1-inch chunks
- 8-12 skewers
- For the Marinade
- 2 tablespoons fresh parsley, finely minced
- 2 tablespoons fresh marjoram, finely minced
- 1 tablespoon fresh thyme, finely minced
- 2 tablespoons light olive oil
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 2 cloves garlic, roughly chopped
- ½ teaspoon sea salt
- ½ teaspoon ground black pepper
- 3 cloves garlic, sliced or pressed
Instructions
- Pat the beef cubes dry and sprinkle generously with salt and pepper.
- In a large bowl or large resealable plastic bag, add the marinade ingredients and whisk together. Add the beef to the herb mixture and let marinate for at least 1 hour or up to overnight in the refrigerator.
- Remove the meat from the marinade, and slide onto pre-soaked wood or metal skewers. Alternating with red peppers and onion pieces. Repeat until the skewers are filled.
- Preheat your grill to medium-high. Cook on the grill for 6 to 8 minutes or to the desired doneness, turning every 2 minutes.
- Remove from grill and let rest 2-3 minutes for eating. Serve along side your favorite side dishes. Enjoy.
