Lebanese garlic “Toum” spread
This garlic sauce, known as " Toum", is a Lebanese condiment with endless possibilities. It’s perfect with grilled meats, fried chicken, and potato sandwiches. The lemony tang and pungent garlic are addictive, and a little goes a long way.
Ingredients
- 1 cup of canola oil
- 10-12 fresh garlic gloves-peeled and crushed ( depends on how garlicky you like it)
- 1/2 tsp lemon citric salt
- 1 tbsp. of white vinegar
- 4 raw egg whites ” egg whites only”
- 1 1/2 tsp sea salt
Instructions
- Use a food processor to mix egg whites until light and fluffy.
- Add garlic, salt, lemon salt, and vinegar. Process for 30 seconds.
- With the processor still running, slowly pour in the canola oil. Use a thin stream and mix well so that the garlic sauce doesn’t separate.
- Serve with hot meats such as Tawouk and Shawarma or, for the garlic lovers, spread on sandwiches and burgers.
- Extra sauce can be stored in an airtight container in the refrigerator for up to one week.
