Loubyeh b’zeit (Vegetarian Green Bean Stew)
Ingredients
- 2 lbs fresh flat green beans
- 2 tablespoons of olive oil
- 1/2 cup onion, finely diced
- 1 tablespoon garlic, minced
- 1 teaspoon sea salt - ( more if desired)
- 1/2 teaspoon ground black pepper
- 3 cups canned or fresh, diced tomatoes (peeled if using fresh)
- 1 cup of fresh tomato puree
- 1/2 cup water
Instructions
- Wash green beans, remove ends, and cut into 2-inch lengths.
- Heat a large pot over medium heat. Add olive oil and onions, sauté until clear (about 2 minutes), add the garlic and sauté another 1 – 2 minutes. Add green beans, salt and pepper, stir and cover. Cook for 5 minutes.
- To the pot, add diced tomatoes, tomato purée, and water. Bring to a boil, then reduce the heat to low. Simmer, covered, for 20 -25 minutes. The sauce will thicken and the beans should be cooked through but still a bit firm. Taste and adjust salt as desired.
- Transfer to a serving dish and drizzle olive oil over top
- Enjoy as a side dish with pita bread, or as a main dish with Lebanese rice
