Grilled Lemon Herb Mediterranean Chicken
Ingredients
- 6 boneless, skinless chicken breasts, lightly pounded to make it even all over
- 2 tablespoons light olive oil
- ½ cup freshly squeezed lemon juice
- 1 tablespoons white vinegar
- 2 tablespoons fresh or dried chopped parsley
- 1 teaspoon chives
- 2 teaspoons dried basil
- ½ teaspoon red chili flakes
- 1/4 cup of water
- ½ teaspoon paprika
- 2 teaspoons fresh garlic, minced
- 1 teaspoon dried oregano
- 1 ½ teaspoon sea salt
- 1 teaspoon black pepper
Instructions
- Trim the chicken: trim any fat from breasts with a knife.
- Using a Ziplock bag, place 1 chicken breast at a time, seal and press out as much air as possible. Using a heavy, flat object to pound the breast ---I use a small sauce pan or rolling pin will do. Pound the chicken breast to your desired thickness, remove the chicken and repeat with the remaining. Place all the chicken in a large Ziplock bag or bowl.
- In a small bowl, combine --- oil, lemon, vinegar, parsley, basil, chili flakes, paprika, garlic, oregano, salt and pepper and whisk. Add to the chicken breast and coat very well. Leave to marinate for at least 6 hours to overnight.
- Remove chicken from bag, grill for about 5-6 minutes preside or until cooked through.
- Serve with your favorite side dishes. Enjoy!
