Lemon Garlic Roasted Chicken and Potatoes
Lemon Garlic Roasted Chicken and Potatoes – moist tender chicken with lemon, golden crisp potatoes and lots of fresh garlic and herbs. Deje was Batata Bil Sayniyeh simply means baked chicken with potatoes. The best part of this dish the lemon and garlic sauce. A very popular and traditional Lebanese dish that can be made with any part of the chicken. I like to use the breast, but you can use thighs or whole legs with or without the skin. Everyone in my family loves it. But really, who wouldn’t love, lemony, garlicky herb-infused chicken breasts full of flavor with crisp, golden potatoes?
Ingredients
- 4 boneless skinless chicken breasts ~3 lbs (you can use thighs or drumsticks)
- 4 medium potatoes (peeled and cut into wedges
- 8 cloves of garlic, roughly chopped
- 1 cup of freshly squeezed lemon juice
- ¼ cup olive oil
- 1 1/2 cups of water
- ½ teaspoon black pepper
- 2 teaspoon sea salt ( half to sprinkle on chicken when searing and rest to make lemon mixture)
- 1 teaspoon dried mint
- 1 tablespoon dried oregano
- ¼ teaspoon of all spice
- 1/2 tsp ground cardamom + 1 tsp coriander seeds
- To Clean Chicken
- 4 cups of cold water and ¼ white vinegar to clean chicken
- To Sear Chicken
- 2-3 tablespoon of Vegetable oil
- Lightly season with salt
Instructions
Method:
- Cleaning the Chicken: Soak the chicken in water and vinegar for 5 minutes; rinse with cold water then pat dry them with paper towels.
- To make the garlic sauce: Place all the ingredients (minced garlic, lemon juice, salt, olive oil, water, mint, dried oregano, coriander seeds, all spice and black pepper and salt in bowl and mix.
- To Sear Chicken: place oil in a heavy skillet over high heat. Lightly sprinkle chicken pieces with salt and place in skillet. Sear chicken 2-3 minutes on each side until golden brown. Transfer chicken to oven tray and start to layer with other ingredients.
- Place sliced potatoes over the chicken, then pour the dressing over the tray and mix all the together. Rearrange into tray for even cooking all over.
- Cover tray with foil and place in a preheated oven at 400 degrees. Bake for about 45 minutes, or until the chicken is cooked. Uncover and broil until the chicken and potatoes are golden brown.
- Serve Warm with white rice and fattouch salad. Enjoy!
