TRIPLE CHOCOLATE M&M COOKIES
These deep, dark, rich chocolate cookies are a triple threat. Filled with chocolate galore, they are moist chewy and absolutely delicious. My boys and I make these year round for school parties year round with almost every occasion ( Valentines, Halloween, Easter and Xmas). They will for sure be a hit with everyone.
Ingredients
- 1 ½ cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ Tsps. salt
- 1 tsp instant black coffee granules
- 1 cup semi-sweet chocolate chips
- 2 tbsp. unsalted butter
- 2 tsp pure vanilla extract
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 2 tbsp. whole milk at room temperature
- ½ cup milk chocolate M&Ms
- ½ cup milk chocolate chips
- Garnish:
- 1/4 cup M&Ms
- 1/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Line two large baking sheets with parchment paper, lightly spray them with non-stick spray, and set aside.
- In a large bowl, whisk the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
- Place butter and 1 cup of chocolate chips in a heat safe bowl and set over saucepan of hot simmering water stirring until melted. Make sure chocolate doesn’t come in contact with any water or steam and be sure not to overheat or the mixture will seize on you.
- Once chocolate in melted, with hand mixer on low to mix in coffee, milk and vanilla and mix well. Add in both sugars and beat again for 30 seconds.
- Add eggs and beat well for one minute. Pour chocolate mixture over the dry ingredients and lightly mix together.
- Using your spatula, fold in ½ cup of M&Ms and chocolate chips and mix well. Cover bowl with plastic wrap and chill in fridge at least 30 minutes to 1 hour.
- Using a large spoon, take portions of the batter and place on baking sheet about 2 inches apart. Slightly flatten dough balls or leave as is for a more rustic cookie. Bake for 8-10 minutes or until the edges are set and the centers are still little soft.
- Remove from oven and press a few extra M&Ms and chocolate chips on the cookies right when they come out of the oven. Completely cool down before eating. ENJOY!
