Orange Almond Cake
Ingredients
- 3 cups of all-purpose flour
- 5 eggs at room temperature
- 1 ½ cups of granulated sugar
- 1 Tbsp. Of orange zest
- ¾ cup of freshly squeezed orange juice
- 1 cup vegetable oil
- 1 tsp pure Vanilla extract
- ¾ cup of milk
- 2 tsp. baking powder
- Pinch of salt
- 1 tsp of baking soda
- ½ cup of chopped or slivered almonds
- 1 tsp vinegar
Instructions
- Preheat oven to 250° degree. Grease a 9X9 baking dish and set aside
- In a bowl, sift flour, pinch of salt and baking powder and set aside
- In your stand mixer with the beater handle, place eggs and sugar and beat on high for 4-5 minutes ( you want to see more volume, light yellow and creaming mixture)
- Lower the speed on mixer and add orange zest, vanilla and mix for 1 minute on low
- Slowly, add the oil and keep mixing until combined about 1 minute. You want to drizzle the oil in a straight line until done, then add milk and orange juice and mix.
- Add the flour mixture and beat on low until mixture is well combined.
- In a small cup, mix vinegar with baking soda and add to cake mixture. Mix all together for 30 seconds.
- Pour the cake mixture into your greased dish and garnish with almonds.
- Bake for 40-45 minutes until golden brown and tooth pick comes out clean.
- Let completely cool before serving.
