Banana Cake with Cream Cheese Icing
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- ½ teaspoon nutmeg
- ½ cup unsalted butter, at room temperature
- 3 tablespoons canola oil
- 3 large eggs, at room temperature
- 3/4 cup granulated sugar
- 2 teaspoon vanilla extract
- 4 large ripe bananas
- 1/2 cup milk, room temperature
- ½ cup ground pistachios (optional-you can use walnuts, pecans, almonds or without any nuts)
- ICING
- ¾ cup cream cheese, at room temperature
- 1 teaspoon pure vanilla extract
- 1cup icing sugar
Instructions
- Preheat oven to 375 degrees. Lightly grease an 8 or 9-inch loaf or round pan with butter (1 teaspoon)
- In a small bowl, whisk together the flour, nutmeg, baking powder, and salt. Set aside.
- Using an electric mixer on medium speed, beat the butter, oil, and sugar until light and fluffy about 2 minutes. Add eggs, one at a time, mixing well after each addition.
- In a separate bowl, mash the bananas with the milk and vanilla. Set aside.
- Into the butter mixture, add half the flour mixture along with the banana mixture and mix until combined. Add the remaining flour ingredients and mix until all comes together.
- Pour the cake batter into the greased baking pan. Bake 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool the cake in the pan on a wire rack before icing.
To make the frosting: Using an electric mixer on medium speed, beat the cream cheese and vanilla. Reduce the speed and slowly add the icing sugar. Spread the frosting on the cake. Sprinkle with nuts of your choice. Enjoy!
