Ingredients
- 2 teaspoon of yeast
- 1 teaspoon sugar
- ¼ cup of warm water to proof yeast
- 3 cups of four
- ¼ cup of sugar
- 1 teaspoon baking powder
- ¼ small spoon of salt
- ¼ small spoon of cinnamon
- 2 tablespoons canola oil
- 3 tablespoons of unsalted butter
- 1 large egg (room temperature)
- ¼ cup of warm water + more if needed
- FILLING
- 500 grams date paste package
- 1 tablespoon unsalted butter
- ¼ teaspoon ground cinnamon
- TOP COATING LAYER
- 1 large egg
- ¼ spoon small vanilla
- ¼ cup sesame seeds
Instructions
- In a small bowl, place yeast with 1 teaspoon of sugar, mix then add warm water to Proof. Set the bowl aside to bubble.
- In a bowl of your stand mixer, with the dough hook add flour, sugar, baking powder, salt, nutmeg, and mix well. Add the oil and butter and mix until the flour is dampened all over. Add the bubbled yeast, egg, water and mix until the dough leaves the sides of the bowl. If dough is still not coming together into a ball, add 1 tablespoon of water at a time.
- Remove dough to a lightly floured surface and knead for 2-3 minutes then place in a lightly oiled bowl. Cover with plastic for 1 hour to rest and double in size.
- Meanwhile, prepare the filling by mixing the ingredients together until you get smooth and shiny dough, set aside.
- Divide the dough in 6 equal parts. Roll each out into a long ribbon sheet 40 cm long and 3-4 inches across; shape date paste into ½ inch logs at the edge of the rolled out dough. they will almost double in size when baking, so keep them around 1/2 inch thick logs.
- Enclose the dough and roll it out, then pinch the seams well.
- Cut into 2 inch pieces and place on baking sheet lined with parchment paper, seam down.
- Mix the egg layer ingredients (egg, vanilla) and brush the fingers, then sprinkle with the sesame seeds. Place in a warm place for 5 minutes. ( I place on top of stove while oven is warming up)
- Place baking sheet into preheated 350 degree oven for 15 to 20 minutes or until the rolls are golden in color. Remove from oven to cool before serving. Store in the fridge up to a week air tight Tupperware.
