CHICKEN FAJITAS
Chicken Fajitas are one of the easiest dishes to quickly put together. I have to admit, I too use to use the little packets that are cheap and easy to use. Nonetheless, once I started watching my salt intake I quickly discovered that I have all the ingredients in my pantry and just started to make my own and haven’t looked back. I use this mix to make, chicken, seafood and beef fajitas, and even when I on rare days when I don’t have any meat at home and use it to make portabello mushroom and zucchini wraps. Just few minutes to make and trust me you won’t buy it again. This dish is simply, quick and easy to make, and of course the veggie possible are endless. However, the best part is the delicious side toppings and garnishes.
Ingredients
- SEASONING MIX
- 1 tsp onion powder
- 1 tbsp garlic powder
- 1 tsp black pepper
- 1 tbsp ground cumin
- ½ tbsp. Chili powder
- 1 tbsp mustard powder (optional)
- 1 tsp Red pepper flakes
- 1 tbsp. of ground paprika
- 1 tbsp. dried oregano
- Chicken Fajitas Filling
- 3 tbsp. of extra olive oil
- Chicken breast cut into ½ inch strips (roughly 16 oz) - (I use Free Range / Halal)
- 1 large red onion thinly sliced
- 1 large red pepper thinly sliced
- 1 green pepper thinly sliced
- 200 grams of cremini mushroom thinly sliced
- 1 tbsp. lemon juice
- 8-12 corn or white tortillas
Instructions
- Mix all your seasoning ingredients in a small jar (with lid), shake and store any left overs in your pantry for next use.
- In a large skillet on medium high heat, add 2 tbsp oil. Add chicken and sprinkle with half the seasoning mix and cook until browned. Mixing well as they cook, about 5 minutes. Transfer cooked seasoned chicken to a plate and set aside.
- In the same skillet on medium heat-high heat, add remaining oil. Add mushrooms and cook for 2-3 minutes, then add onions and sauté together until lightly softened. Sprinkle 1 tbsp of the seasoning mix, then, add both peppers lightly cook until crisp-tender around 2 minutes.
- Return chicken to skillet, add lemon juice, stirring, until almost reduced and chicken is warmed up again, 2 to 3 minutes.
- Remove skillet from heat and serve on tortillas. Spoon filling down the center of tortillas; fold in half and enjoy with your desired accompaniments.
