Date and Almond Cake
Ingredients
- ½ cup of ground almonds
- 1 ½ cup of date paste
- 2 cups of water
- 1 tsp of baking soda
- ½ cup of unsalted butter at room temperature
- 2 large eggs
- ¾ cup of white sugar
- 2 tsp of vanilla extract
- 1 ½ cups of all-purpose flour
- 2 tsp of baking powder
- Pinch of salt
- 1/4 cup powdered sugar to dust the cake (optional)
Instructions
- Grease a 9 inch square pan or your choice Bundt cake pan, with cooking spray or butter
- In a sauce pan on medium heat, add 2 cups of water and bring to a boil, add date paste and gently cook for 4 to 5 minutes, making sure to break up any pieces. Add baking soda and continue to mix for 1 minute. (You will notice a reaction after adding the baking soda). Remove from heat and let cool for 15 minutes. You’re looking for a soft paste consistency.
- In your stand mixer with paddle attachment, cream the butter and sugar on medium speed till they are well combined. Add ground almonds, salt, baking powered, Vanilla extract, flour and cooled date mixture and mix them in till they are well combined together.
- Pour the batter into the greased pan and bake for 35-40 or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cake cool before removing from try.
- Serve as is or dust with icing sugar
