Oven Roasted Curried Cauliflower
Ingredients
- 1 large head of Cauliflower (cored and sliced into bite size florets)
- 1 small white onion, peeled and roughly chopped
- 3 cloves of garlic minced
- 2 Tbsp. of fresh lemon juice
- 1 Tbsp. of water
- 1/3 cup of olive oil
- 1 tsp of ground turmeric
- 1 tsp ground coriander
- ½ tsp of curry powder
- ½ tsp of salt
- ½ tsp of black pepper
- ½ tsp red pepper flakes
Instructions
- Preheat oven to 400 degree F.
- In a bowl, place (garlic, lemon juice, oil, turmeric, coriander, curry, salt, black pepper and red pepper flakes and whisk until well combined, set aside.
- Add the onions and cauliflower florets into a a large mixing bowl, then pour the curry mixture and gently toss to coat.
- Evenly spread the cauliflower and onions onto non stick baking sheet and bake for 25-30 minutes. Cauliflower should be golden brown when baking is complete.
- Carefully remove from oven and serve. serve hot as a side dish, or cold on top of your favorite salad.
