Shorabit Addas (lentil soup)
Ingredients
- 1.5 cups cracked red lentils Washed
- 8 cups water OR vegetable stock
- 1 medium white onion, diced
- 2 cloves garlic, minced
- 1 carrot, finely chopped
- ¼ cup coriander, chopped
- 2 tsp of ground cumin
- ½ tsp turmeric powder
- 1 tbsp. olive oil
- ¼ cup fresh lemon juice
- 1 tsp black pepper
- 1/2 tsp red pepper flakes-optional
- 1 tbsp. salt
Instructions
- On a flat tray, pick lentils for stones or other miscellaneous material. Wash lentils and set aside.
- Over medium-low heat, add olive oil and sauté garlic and onions until translucent. Add carrots and continue stirring for a few more minutes. Then add (half the coriander, ground cumin, turmeric, black pepper and salt. Stir to combine.
- Add liquid and lentils and bring to a boil. Lower temperature and simmer gently for 30 minutes or till it has a thick, creamy consistency., stirring occasionally. Add the Lemon juice and the remaining coriander, set aside to cool before serving. Adjust salt and pepper to desired liking.
- For a smooth soup like in the photo, puree in a blender or food processor or use an emulsion blender. Alternatively, if you like the texture, leave as is.
- Garnish with chopped coriander and serve with fresh lemon slices.
