Shrimp Pasta With Broccoli In A Garlic Lemon Sauce
Ingredients
- 1/2 lb spaghettni pasta (cooked with 1 Tbsp. salt + 1 Tbsp. olive oil) - you can use any pasta you like
- 1 lb broccoli, cut into pieces, washed and rinsed + 1/4 cup of water
- 300 grams cremini mushrooms, sliced + ¼ cup of water
- 3 Tbsp. butter, divided
- 3 Tbsp. olive oil, divided
- 6 cloves garlic, finely chopped
- 1 small red chili, finely diced and seeded
- 450 grams shrimp, peeled and deveined - I used already cooked precooked shrimp
- 1 tsp sea salt
- 1 tsp. black pepper
- 1/2 cup freshly squeezed lemon juice
- 3/4 cup fresh coriander, finely chopped
- Grated parmesan to serve
Instructions
- Bring a large pot of water to a boil, add 1 Tbsp salt and cook pasta according to package instructions, or desired doneness. Drain pasta, return to pot and add 1 tablespoon of olive oil and mix well, cover to keep warm.
- Place a large, deep pan over medium to high heat and add ½ Tbsp. olive oil and ¼ cup of water. Add sliced mushrooms, season lightly with ½ tsp salt and ½ tsp pepper and cook uncovered for 4-5 minutes or until crisp and darkened in colored, stirring occasionally. Remove from pan onto a plate.
- In the same pan, add ½ tbsp. olive and ¼ cup water, add broccoli pieces, lightly season with salt and pepper and cook for 2-3 minutes, remove from pan.
- To the same pan, add remaining butter, garlic, red chili and olive oil and cook until garlic is light golden brown. Add shrimp, and season with ½ tsp black pepper. Sauté until shrimp is coated with the butter mixture (1 minute) and add the chopped coriander and cooked for 1-2 minute on high heat. Be careful not to overcook or shrimp will be tough.
- Add the lemon juice, and stir to combine. Return cooked pasta, broccoli and mushroom to the pan. Toss everything to combine and serve with grated Parmesan cheese and extra lemon wedges. Enjoy.
